Introduction

One of the things I miss most about eating meat is Cajun food, so I took a recipe for Shrimp Etoufee and edited it a bit. Good served over brown rice. Number of Servings: 4

Ingredients

    * 1 block extra-firm tofu, drained and cubed
    * 1 cup onions
    * 2 stalks celery
    * 2.5 tsp all-purpose flour
    * 1 clove garlic
    * 1.75 tsp paprika
    * 1 6-oz can tomato paste
    * 2 cups vegetable broth
    * 1 tbsp margarine
    * salt and pepper to taste
    * crushed red pepper to taste

Directions

* In a large skillet, melt margarine and saute onions, celery and garlic for about 4 to 5 minutes or until they are cooked down.

* Stir in flour and cook briefly, do not brown. Stir in chopped and drained tofu.

* Pour in 2 cups of broth. Stir in paprika and season with salt, pepper and red pepper flakes to your taste.

*Add tomato paste. Simmer covered for 30 minutes. Should be a thick and have a gravy-like consistency.
