Broccoli Cheese Strata

Introduction

This crustless quiche-like dish is perfect for brunch or a light dinner. Serve with a mixed greens salad. You can save even more calories/fat by using light wheat bread and 2% cheese, but the nutritional info is based on regular. Ingredients

    5 large eggs
    3/4 c. egg substitute
    1 t. hot sauce (Tobasco)
    1 t. salt
    1/2 t. pepper
    4 slices whole-wheat bread, cubed
    6 cups fresh broccoli florets
    2 t. extra-virgin olive oil
    1 medium onion, chopped
    8 oz. part-skim mozzarella cheese, shredded

Directions

1. Preheat oven to 350 and coat a 13x9 pan with cooking spray.
2. Whisk eggs, egg substitute, milk, hot sauce, salt & pepper in large bowl; add bread and stir to coat; set aside.
3. Steam broccoli until JUST tender (3-4 min.). Cool and chop coarsely.
4. Heat oil in small skillet over medium-high heat, add onion and cook, stirring often, until softened and light golden. (3-5 min.)
5. Add onion and broccoli to the egg mixture, stir in cheese.
6. Pour into the prepared pan, spread evenly.
7. Bake until light golden and set, 45-50 min.
