Polish style veggies and mayo salad

Introduction

Popular Polish dish served as a side to cold cuts, cheese and bread. There are several versions of this salad with different veggies. I grew up with this one. It's very tasty and filling. Popular Polish dish served as a side to cold cuts, cheese and bread. There are several versions of this salad with different veggies. I grew up with this one. It's very tasty and filling.
Number of Servings: 2

Ingredients

    Egg, 1 large
    Mayonnaise, regular (mayo), 2 tbsp
    Dill Pickles, .25 cup
    *Potato, raw, .25 cup diced
    Peas and carrots, canned, .5 cup

Tips

You can also add chopped apple if you're not counting carbs.


Directions

Boil the egg until hard boiled. Cook potato until soft. Potato should be boiled in skin and skin removed once it's cool down so it doesn't fall apart during cooking.
Chop everything into small pieces and mix together with mayo. Add salt and pepper to taste.
