Sue's Home Made Veggie Soup

Introduction

Number of Servings: 1

Ingredients

    1 x medium sized onion
    1.2 head green cabbage
    4 x medium carrots
    2 x red ripe tomatoes (medium sized)
    3 x large celery stalks (plus leaves if liked)
    1 x medium sweet red pepper
    salt, pepper, Worcester Sauce etc.

Tips

Don't boil for longer than necessary to get the veggies soft enough to blend.

Directions

Roughly chop all veggies and place in large saucepan/pot.
Add enough water to cover by about an inch.
Bring to the boil, turn down heat and simmer for 30 mts.
Put into blender and blend to taste.
Add seasoning as desired.

Serving Size: makes 3 or 4 cups depending on size of cup!
