Zucchini/Carrot Latkes with Apple/Yogurt Topping

Ingredients

    Applesauce
    1 apple, shredded
    1 t. cinnamon
    1/2 t. nutmeg

    No-Fat substitute for sour cream:
    1/2 cup Chobani no-fat Greek Yogurt

    Pancakes
    1/2 c. shredded carrot
    1/2 c. zucchini
    3 large egg whites
    1/4 t. original Spike seasoning
    pepper

    For the frying pan: The nutritional info includes 1 teaspoon (5 ml) Coconut Oil. Olive oil can be used, or spray with cooking spray.

Tips

Make a pudding by mixing all ingredients and baking for 45 min. at 350. Grease the bowl.

Directions

Applesauce:
Shred Apple. Add cinnamon, splenda (and nutmeg if desired).
I prefer it raw, but you can steam or microwave to cook and have it be more like canned applesauce.

Beat the egg whites.
Shred carrot and zucchini. Add to Egg whites.

Preheat your frying pan, and wipe with oil or spray.
Drop veggie/egg mix by large tablespoons. Flatten.

Flip when one side is golden. Plate up when the 2nd side is golden and egg is set. I do this with burner set at medium. I cover with my clear lid so I can check for burning.

Serve with Chobani no-fat Greek yogurt and applesauce.

If you need more protein, walnuts are great sprinkled on top. But they are not included in the calorie count.


Serving Size: meal for 1, add a green salad with sliced oranges and balsamic vinegar.
