Introduction

This was my go-to sloppy Joe recipe, so when I went vegan I just substituted Boca crumbles. No one in the family could taste the difference...they always ask for it! Number of Servings: 1

Ingredients

    1 pckg. Boca or Quorn crumbles
    1/2 red onion, diced
    1/2 red pepper, diced
    1Tbs. Olive oil
    1 Tbs. grill seasoning blend (I use McCormick's Montreal seasoning)
    2 Tbs. brown sugar
    1Tbs. Vegan Worcestershire sauce such as Annie's
    1 c. Tomato sauce
    4 whole wheat hamburger buns

Tips

Quorn crumbles are a good substitute for Boca if you don't want to use soy...they are made of mushrooms.


Directions

Heat olive oil over med-hi heat. Add onion and red pepper and sauté for a few minutes. Add the crumbled "meat" and stir until it is thawed.

Mix grill seasoning, brown sugar, Worcestershire sauce, and tomato sauce in a small bowl. Pour over the "meat" and veggies and stir well.

Reduce heat to low and simmer for 10 min. Serve on buns.

Serving Size: Makes 4 sandwiches
