Introduction

Broccoli slaw and veggies turned into a quick weekday meal! As shown in picture, I add pork (not in calculation)... also good with shrimp, beef or tufu! Ingredients

    1 Broccoli Slaw (President Choice) Bag
    1 tbsn olive oil
    2 roasted garlic cloves
    1 hot pepper (finely chopped)
    1 onion - chopped
    1 large green or red bell pepper - chopped
    Fresh ginger and cilantro - to taste

    2 tbsn peanut butter
    2 tbsn soya sauce
    1 lemon (juice only)

Tips

I have a few makeover recipes of this version - I use this one a the base and I vary ... my favorite one is adding tofu and steamed shangai bok...


Directions

Heat frying pan - add oil, lemon juice, garlic and onion. Add peppers and broccolli slaw and cook until tender (about 10 min).

In microwave, heat peanut butter for 20 sec. Add soya sauce and microwave for additionnal 20 sec. Mix well. Add the warm sauce to the stir fry.

Stir well and serve immediately!

Serving Size: 4 bowls (as shown in picture!)
