Curry Coconut Rice

Introduction

Vegan, filling, and excellent. Vegan, filling, and excellent.
Number of Servings: 4

Ingredients

    1 C brown rice
    1/3 C chickpeas
    1/4 C toasted, shredded coconut
    1 t curry powder
    2 dashes salt
    2 dashes pepper

Directions

Makes 4 servings, about half a cup each.

Just stick it all in a rice maker or pot together, and treat it like you'd treat just plain old brown rice! Its tasty! :)
