Walnut & Spinach Pesto

Introduction

Walnuts are the highest in heart healthy antioxidants. Spinach is high in vitamin A (eye health) and vitamin K (blood and bone health). Not only is it good for you but it tastes great! Number of Servings: 8

Ingredients

    1/4 cup walnuts, toasted
    4 cups fresh spinach leaves
    1 clove garlic, peeled and chopped
    1/4 cup feta
    1/2 cup olive oil

    Most pesto recipes contain basil. I am not a huge fan of the flavour so I left it out. If you do like it use 3 cups of spinach and add 1 cup of basil.

Tips

Great to add to pasta. I also like it on fish. I add it to light sour cream/yogurt for a veggie dip. Also good on toast and with eggs.


Directions

Put walnuts, spinach, garlic, and feta in a food processor. Pulse until it forms a paste. Slowly poor in olive oil until the mixture is all combined and makes a paste.

Serving Size: Makes about a cup. 2 Tbsps per serving.
