Elaine's Vegetarian Parcels

Introduction

Number of Servings: 6

Ingredients

    375g Ready to bake light shortcrust pastry
    160g Meatfree vegetarian mince
    160g Vegetable Stir fry (ready to cook with seasoning already added)
    160g Mushrooms cut in quarters
    60g Potatoe diced pre cooked
    1/2 Onion diced
    Stock cube dry (vegetarian)
    8 heaped tspns Bisto Vegetable gravy
    260 mls hot water

Directions

1. For the filling: Fry onion in pan( I use Fry light 1cal per spray) add meatfree mince, stirfry vegetables, cook on medium heat for 10 minutes.
2. Add mushrooms and crumble dry stock cube in to pan, simmer for 5 minutes then add potatoes, simmer on low heat for 10 mins
3. While the mixture is simmering make up the vegetable gravy with the 260mls hot water. gravy must be thick.
4. Add gravy to pan and mix gravy through mixture, allow to simmer for 5 mins.
5. Cut pastry into 6 equal squares
6. Divide the filling equally onto middle of each square.
7. Join diagonally the parcel and pinch the sides together ensuring the mixture stays in the parcel
8. Preheat oven to 180 degrees celsius and bake parcels in oven for 10 minutes or until parcels are golden brown.
9. Serve with fresh salad or choice of side
