Awesome veggie soup!

Introduction

Great, light soup that is packed with nutrients and will leave you feeling full of energy and not weighed down. Great, light soup that is packed with nutrients and will leave you feeling full of energy and not weighed down.
Number of Servings: 1

Ingredients

    Can of chicken broth or 14 ounces of Great Value Chicken Broth
    11.5 ounces of tomato-vegetable juice
    1 cup of water
    2 carrots, sliced
    2 stalks of celery, diced
    1 (14.5 ounces) can of diced tomatoes
    Salt
    Pepper
    Garlic

Tips

Make sure veggies are tender by testing them with a fork. If the fork goes cleanly through carrots, the soup is done. Do NOT overcook veggies.
Celery needs to remain a tad crunchy.


Directions

1. In a large pot, combine broth, tomato juice, water, carrots, celery and tomatoes.
2. Season with salt, pepper, garlic, or any other choice seasonings.
3. Bring to a boil and simmer for 30 minutes or until veggies are tender.

Serving Size: Makes a batch of soup
