Brown Vegetable Fried Rice for one

Introduction

Number of Servings: 1

Ingredients

    0.5 cup cooked brown rice
    2 large eggs
    1 cup frozen mixed vegetables
    0.07 teaspoon lite salt
    dash of black pepper
    1 teaspoon sesame oil
    0.5 tablespoon less sodium soy sauce

Tips

Use any mixed veggies you like. This is a great way to use leftover veggies or rice.


Directions

spary small nonstick skillet with non-stick cooking spray. Heat over medium heat and add crack two large eggs into skillet. Scramble the eggs and add salt & pepper or desired seasonings. Once eggs are half cooked, add frozen mixed veggies. Continue cooking, stirring frequently, until eggs are mostly solid. Add rice and lower heat. Continue cooking until egg is completely done. Spoon onto plate or bowl and drizzle with sesame oil and soy sauce. Enjoy!
