large sweet onion
small zucchinis
can chunky crushed tomatoes
olive oil
smart balance butter w/canola
Tips
Directions
Add olive oil and smart balance to a large skillet - melt. Chop onion and add to pan - simmer. Slice zucchini and add to pan. Once veggies are still slightly crisp, add canned tomatoes. Simmer while you cook the quinoa. Once the quinoa is done, add to pan. Stir well and serve. Makes 8 - 1 cup servings.
