Buffalo Wing Meatballs

Ingredients

    1 pound ground chicken
    1 whole egg
    1/4 cup wing sauce
    1/2 cup whole wheat panko bread crumbs
    1/4 cup blue cheese, crumbled


Directions

Preheat the oven to 400 degrees F.

In a large mixing bowl, combine ground beef, egg, wing sauce, bread crumbs and cheese. Using your hands, mix all ingredients until well combined.

Using a food scale, weigh meatball mixture to 1.5-ounce portions. Roll into a ball and place each meatball into a mini muffin pan tin.

Bake for 20 minutes or until golden and cooked through.

Let them cool, Use immediately or freeze for future use.

Serving Size: 12 - 2" meatballs
