Crustless Veggie Quiche

Introduction

Gluten free, dairy free vegetable quiche. Gluten free, dairy free vegetable quiche.
Number of Servings: 6

Ingredients

    1 cup spinach, chopped
    1 yellow pepper, chopped
    1 red pepper, chopped
    1/2 cup daiya mozzarella shreds
    6 eggs
    1 cup almond milk
    3 oz sliced baby bella mushrooms

Directions

Chop spinach and peppers. Lay in bottom of a pie plate. Add sliced mushrooms. In a separate bowl beat eggs and add the almond milk (or any milk of your choice). Pour over the vegetables, shaking it a little to settle the egg towards the bottom. Heat oven to 350 degrees and bake 30-40 minutes until the middle is set.

Serving Size: Makes 6 pie sized servings
