Introductionfor the slow cooker for the slow cooker
3 lb skinless chicken in pieces
1 chopped onion
1 rib of celery - chopped
2 Jalapeno - chopped
1 Habanero pepper - chopped
3 C. Salt free stewed/diced tomatoes
4 cloves of chopped garlic
Creole season salt (2 tsp)
1 pkg of sliced mushrooms (about 2 cups)
3 cups of brown rice (uncooked)
Place chicken and veggies (everything but mushrooms) in slow cooker, add tomatoes and seasoning and cover with mushrooms. Add a little water in needed. When there are about 3 hours left of cooking time you can stir in the rice or cook it separate.
Turn slow cooker on low for 8-12 hours or high 5-6 hours.
Makes 8 1 cup servings.
