Introduction

Number of Servings: 4

Ingredients

    2 baking potatoes washed and sliced into 1/2 inch rounds
    1 pound 99% fat free Ground Turkey
    1 can of black beans
    1 cup of fat free shredded cheddar cheese
    1 cup of salsa or chopped tomatoes
    1 packet of taco seasoning

Directions

Spray a baking sheet with fat free cooking spray and layer the potatoes on. Season the potatoes with salt & pepper. Bake at 450 for 20 minutes.
Meanwhile, cook the ground turkey. When done add taco seasoning and black beans. Cook another 8-10 minutes over medium heat.
Top the potatoes with the turkey.black bean mixture and add the salsa and cheese. Place in the oven for another 10 minutes with the heat turned off.
