Pannukakku, Lite version

Introduction

Wonderful, lite Finnish recipe. Wonderful, lite Finnish recipe.
Number of Servings: 6

Ingredients

    1 cup nonfat milk
    1 cup all-purpose flour
    4 eggs, beaten
    1 cup Carnation evaporated skimmed milk
    1 tsp. salt
    2 Tbsp. sugar
    1 Tbsp. butter

Tips

Instead of sugar and cinnamon, use fresh fruit or your favorite fruit compote or jam.


Directions

Preheat oven to 400 degrees
In a medium bowl, beat flour and nonfat milk until no lumps remain.
In a second medium bowl, beat eggs.
Add evaporated skimmed milk, eggs, sugar and salt to milk mixture.
Heat a 10" cast iron skillet and melt 1 Tbsp. butter. Pour batter into skillet and set for about a minute. Place skillet in oven and bake until pannukakku edges are golden brown and puffy, and have risen above edges of skillet, about 20 minutes.
Remove hot skillet from oven and loosen pannukakku edges with a heat-proof rubber spatula.
Slice pannukakku on to serving dish. Sprinkle with sugar and cinnamon.
