I added a little Miracle whip to the egg to add moisture when cooking. Baking the chicken instead of frying helps keep control over calories. 4 halves chicken breasts or 2 whole breasts cut in half
1 tablespoon miracle whip regular ( I use the one made with olive oil)
1 Cup Parmesan cheese, shredded
cooking spray

Directions
Pre heat oven to 350 F.
beat egg and miracle whip together, I add a little water to this approx 1 teaspoon.
Dip chicken in egg mixture then parmeson cheese. Put on a baking dish sprayed with cooking spray. Bake at 350 F for 60 minutes
