Whole Wheat Carrot Bran Muffins

Ingredients

    1 cup of oat bran
    3/4 cup soured milk (sour with vinegar) or buttermilk
    1 cup of raisins
    1 1/2 cups whole wheat flour
    1/2 cup of brown sugar
    1 1/2 tsp of cinnamon
    1/2 tsp nutmeg
    1/2 tsp cloves
    1 1/4 tsp baking powder
    1/2 tsp baking soda
    2 eggs
    1/2 tsp salt
    1/3 cup of oil
    apple sauce added to oil to make 1/2 cup
    1 tablespoons of molasses
    1 1/2 cups of grated carrots

Directions

1. Mix your oat bran with the milk in a large bowl and let it sit.
2. Put raisins in large measuring cup, cover with water and microwave for about 5 minutes. This will rehydrate the raisins a bit and keep them from drying out during baking.
3. Grate your carrots (you'll need about 2 medium carrots)
4. Combine all your dry ingredients in a medium bowl and whisk them together, making sure to break up any lumps of brown sugar.
5. Add the eggs, molasses and oil to the bran/milk mixture, and mix well.
6. Add carrots & raisins to wet ingredients and mix.
7. Then add in the dry ingredients and mix until just moistened - don't overmix or your muffins will go all dense and blah.
8. Drop batter using a spoon into lined muffin tins.
9. Sprinkle rolled oats on top if desired.
10. Bake at 350 for 20 to 24 minutes, cool on wire rack.
