A 1945 S & W recipe altered. Original called for 3 strips of bacon. I substituted because I don't keep (the temptation of) bacon on hand. The fat is for the flavor. A 1945 S & W recipe altered. Ingredients

    Bacon fat, 1.5 tbsp
    Ham, extra lean, (5% fat), .33 cup, diced
    Beans, Dark Red Kidney, Bushes, 1.75 cup
    Mustard dry 1/2 tsp
    1/4th tsp Paprika
    Dark Brown Sugar, Pure Cane Sugar, 1 tbsp
    *Flour, white, 1 tbsp
    Cider Vinegar, 3 tbsp
    Pepper, black, 1 dash
    Salt, 1 dash

Directions

Brown the ham in bacon fat. Mix together in small bowl, the mustard, paprika,brown sugar, and flour. Add to the meat the cider vinegar and the liquid from the can of beans. Stir in the powder mixture until smooth. Add beans and heat til warm, not overcooking beans. Serve warm.
