Skinny Shepherd's Pie

Ingredients

    2 cups lentils, prepared according to package directions.
    1 cup chopped celery
    1 cup chopped onion
    1 cup chopped carrot
    1 lb. ground turkey, browned and drained of fat
    1 large can diced tomatoes, drained
    1 can reduced fat cream of mushroom soup
    1 tsp. thyme
    2 tsp. oregano
    6 potatoes, skinned and diced
    4 TBSP. Smart Balance
    1 cup evaporated milk, low fat
    salt and pepper to taste

Directions

Prepare lentils according to package directions.
Cook carrots, onions and celery with lentils or microwave them separately until soft.
Cook ground turkey and drain excess fat.
Mix lentils, vegetables, turkey, canned tomato, cream of mushroom soup and herbs in a rectangular pyrex dish.
Set aside.
Cook potatoes in water until they break apart with fork.
Drain potatoes and mash with butter and evaporated milk. using a small hand mixer.
Salt and pepper to taste.
Spoon mashed potatoes on top of lentil mixture and smooth until lentils are covered.
Bake in 350 oven until brown and bubbly - 30 minutes.
Serves 6-8.
