Introduction

Number of Servings: 4

Ingredients

    1 lb. Chicken Breast (cubed)
    1 Zucchini (1" thick slices)
    1 Red Pepper (1" thick slices)
    1 Onion (chopped)
    1 Tbsp Orange Juice
    1/2 tsp cumin
    1/2 tsp ground coriander
    1/2 tsp ground cinnamon
    2 garlic cloves (crushed and chopped)
    2 tsp. fresh ginger root (grated)
    1/2 tsp salt
    1/4 tsp black pepper
    1/4 tsp crushed red pepper (optional)

Directions

Mix orange juice, coriander, ginger, cinnamon, cumin, salt, garlic powder and pepper in a large bowl and Chicken. Cover and refrigerate for 6 hours. Divide the chicken, zucchini and onion among four large skewers, threading the meat and vegetables over the pointy ends and down the skewers. Grill until Chicken fully cooked, approximately 10 minutes.

Serving Size: 2 Kabobs; with 2 ounces of chicken on each kabob
