Turkey Meatloaf

Introduction

Ingredients

1 - 1.25 lbs package of Jennie O Extra Lean Ground Turkey
1 - Baked Sweet Potato - Medium size
1 - can Rotel Mild Diced Tomatoes and Green Chilies
1 - Package of Taco Seasoning Mix
1/2 cup raw onion
1/2 tsp ground black pepper
Optional (not included in nutrition info)
1/2 cup diced green pepper
Tips
After making this for the first time. I decided that some green peppers would add a little more flavor.
This would also make a great stuffing for making stuffed green peppers.
Directions
Spray a loaf pan with non-stick spray. Preheat oven to 350.
In a large bowl mix together the turkey and baked sweet potato. Add taco mix and stir together. Add onion and black pepper (and green peppers). Mix well and spoon into loaf pan.
Bake for 45 minutes. Drain off liquid. Cook for 15 more minutes. Slice into 6 or more servings.
Note: if you top with ketchup, don't forget to add the additional calories.
