Tex Mex Salad

Serve over a bed of mixed greens (2 cups and chopped cabbage (1.5-2 cups)

Number of Servings: 4

Ingredients

    1 cup quinoa, prepared according to package directions
    1 tomato, chopped
    1 cucumber, seeded and chopped
    3 Tbsp of chopped red onion
    2 halves of lime
    sea salt to taste
    1 jalapeno pepper, chopped finely
    (original recipe lists, 1 large head of cabbage, 1 lb of mixed greens, 1/2 of chopped avocado)

Directions

Prepare quinoa according to directions on package or in rice cooker.
Place chopped tomato, cucumber, red onion, jalapeno, .5 lime, salt in bowl and mix.
Add prepared quinoa and mix again.
(In original recipe, Place chopped cabbage/greens in a large mixing bowl. Place quinoa mixture in greens/cabbage mixture and mix. Toss in avacado and squeeze other half of lime in.)
