Cornmeal Biscuits

Introduction

Delicious biscuits eaten warm with butter or honey. Great with black bean chili. Delicious biscuits eaten warm with butter or honey. Great with black bean chili.
Number of Servings: 18

Ingredients

    1 1/2 cup whole grain flour
    1/2 cup stone-ground cornmeal
    2 T brown sugar
    2 t baking powder
    1/2 t salt
    1/4 baking baking soda
    1/8 t ground chili powder or ground chipotle
    3 T cold unsalted butter, cut into small bits
    1 large egg
    1 cup milk (or buttermilk)

Directions

In a bowl, combine flour, cornmeal, brown sugar, baking powder, salt, baking soda, and chili powder.
Cut the butter into the dry ingredients.
In a small bowl, whisk together the egg and milk. Pour the liquid into the dry ingredients and stir.
Drop the batter by heaping tablespoons, about 1 inch apart, onto greased baking sheet.
Bake in preheated 400 degree oven for 10-12 minutes, until bottoms are golden and tops spring back to a gentle touch.

Serving Size: makes 18 biscuits
