1/2 medium onion, chopped
2 garlic cloves, minced
1 tbsp vegetable oil
2 cans (15-1/2 oz each) great northern beans, drained
4 cups chicken broth
1 tbsp lime juice
1 to 1-1/4 tsp ground cumin
2 tbsp cornstarch
1/4 cup cold water
2 cups of cooked chicken
In a large saucepan, cook onion and garlic in oil until tender. Stir in Beans, broth, parsley, lime juice, and cumin; bring to a boil. Reduce heat; cover and simmer for 10 minutes, stirring occasionally. Combine cornstarch and water until smooth; stir into chili. Add Chicken. Bring to a boil; cook and stir for 2 minutes or until thickened.
Better if cooked in a crockpot on low for 6 to 8 hours.
