Mini Egg Muffins

Introduction

Bite size egg muffins on the go Bite size egg muffins on the go
Number of Servings: 12

Ingredients

    6 Eggs
    Skim Milk (about 1 cup)
    Spinach (to taste) (Torn or Chopped into small peices)
    Onions (about half to one cup)

Tips

i prefer to add some season salt to the batter too.


Directions

Scramble eggs to somewhat smooth consistancy with skim milk. Add spinach and onions.... pour over mini muffin tin, bake for 20 minutes on 350 degrees. Use either muffin cups or olive oil to ensure release from pan.
