Coconut Muffins

Ingredients

    2 cups whole wheat flour
    .5 cups sugar
    1.5 tsp baking powder
    .5 tsp baking soda
    .5 tsp salt
    1 cup coconut
    .3 cups chopped almonds (50 gm)
    1 egg
    .25 cups canola oil
    .75 cups milk


Tips

Coconut oil would be good on this recipe.


Directions

Mix dry ingredients together. Mix wet ingredients together. Make a well in dry ingredients and stir in the wet ingredients, adding more milk if batter is too thick.
Sprinkle a bit of coconut on top of each muffin.
Bake for 20 minutes at 400F.
