Vegetables with Peanut Sauce

    To make peanut sauce:

    2 tablespoons creamy organic or natural peanut butter
    2 tablespoons rice vinegar
    1 tablespoon soy sauce
    2 teaspoons sugar
    1/2 teaspoon of red pepper flakes
    1 to 2 tablespoons water, to thin out the sauce, if necessary

    1 tsp. sesame oil
    1 clove garlic, minced
    1/4 cup onion (42 grams) sliced thin
    1 med. (125 grams) sweet bell pepper, thinly sliced
    3 radishes, large, diced
    1/2 cup (120 grams) zucchini, diced
    1/2 cup broccoli, diced up
    2 cups cabbages, shredded
    2 cups brown rice, cooked


Ina small bowl, whisk all the ingredients for the peanut sauce together until smooth.

In a large skillet add sesame oil, garlic and onions. Cook for about 1 minutes.

Add bell pepper and radishes, cook for about 2 minutes.

Add broccoli and cabbage. Cook for about 2 minutes more.

Evenly divide the rice, vegetables and peanut sauce over three plates

Serving Size: 3 plates.
