Pineapple Lime Shrimp

Number of Servings: 1

Ingredients

    3 garlic cloves, minced
    2 T water
    juice of 1 lime
    1 T olive oil
    1 T ground ginger
    1/4 t salt
    1/4 t pepper
    1 lb. shrimp, shelled and deveined
    Fresh pineapple chunks. (guessing about 1/2 pineapple)
    wooden skewers, soaked, or metal skewers

Directions

Combine ingredients up through shrimp in a large ziplock bag and refrigerate for 1/2 hour or more.

Preheat grill to med-high. Thread shrimp onto skewers, alternating with pineapple. Discard marinade. Grill 4 minutes per side or until shrimp are pink and opaque.

Serving Size: Makes 4 servings, 1 skewer each.
