Faux Cream of Potato Soup


The potatoes, cooked slowly, break up and make a thick soup. The potatoes, cooked slowly, break up and make a thick soup.
Number of Servings: 8


    8-10 Medium Potatoes, diced
    2 medium onion, diced
    8 cups water
    1/4 cup butter
    1 cup milk
    Black Pepper to Taste


Top with bacon bits, cheese, chives, etc. to change the flavour of the soup on a whim. Not included in nutritional info.


1. Add potatoes and onions to water in large soup pot.
2. Bring to a boil over medium heat. Adjust heat so that the soup is just over a simmer.
3. Cook until the potatoes start to break up, stirring occasionally.
4. Add butter, milk and pepper. Stir in add enjoy.
