Pasta, Chicken & Veggies

Introduction

This is a really quick one pan meal. This is a really quick one pan meal.
Number of Servings: 8

Ingredients

    3 shallots, peeled and chopped (can use onion)
    1 cup mushrooms
    1 cup zucchinni cut up in slices and cut in quarters
    2 tablespoons olive oil
    8 oz chicken breastless breast /no skin (cut into cubes)
    3 oz sun dried tomatoes
    1 cup heavy cream
    2 tablespoon grated Parmesan cheese
    lb. Penne Pasta cooked according to box
    Pinch of salt
    1/8 cup herb and garlic spices

Directions

Saute onion in oil for 2 minutes or until soft. Add part of the herb and garlic. Add chicken cook until almost no pink, add veggies, saute and add rest of herb and garlic. When done add cream. Cook 5 minute. Add remaining ingredients and toss to combine.

Serving Size: makes 8 1 cup servings
