Lentil Soup

Introduction

Number of Servings: 6

Ingredients

    2 tablespoons unsalted butter (or olive oil, if you want to make this vegan)
    1 L sweet onion, chopped
    1 teaspoon salt
    2 tablespoons garlic, crushed (about 5-6 cloves)
    1 1/2 tablespoons freshly grated ginger
    freshly ground black pepper, to taste
    1 1/2 cups lentils, washed, drained
    5-6 cups veg broth

Directions

Put butter or oil over medium-high heat in a large stockpot or Dutch oven. Add the chopped onion and salt and saute until browned. Reduce heat to low and add garlic, ginger, and pepper. Cook about 2 mins until aromas are released. Add the lentils and cook an additional 3 minutes. Keep stirring to ensure evenly cooked lentils.

Add veg broth, bring to a boil, reduce to a simmer, and cook uncovered for 1 - 1.5 hours. Stir soup regularly - it burns easily! You'll know it's done when the beans are soft and mealy inside (not powdery/chalky).
