2 boneless, skinless chicken breasts, steamed & minced
1 red apple with skin, diced
1 cup dried cranberries, unsweetened
1 cup pecans, chopped in big pieces
1/2 cup mayo
1/2 fresh lemon or about 2 TBS. REALemon juice
2 TBS.curry powder
Meanwhile, measure out cranberries into large bowl,
diced apple, chop pecans and add condiments to bowl.
Mix so apples don't brown.
Mince chicken or make whatever size you like. Add chicken to mixture and refrigerate for at least an hour.
Serving Size: Makes 6 servings.
