Introduction

I searched a lot of recipes on Sparkrecipes.com and didnt find one like mine yet. So i hope you enjoy!
Lots of yummie stuff going on here, from chicken to green chiles,black beans and corn to red pepper flakes! I didnt tally the tortilla into the equation because i prefere to be versatile in what i wrap these in!

Number of Servings: 6

Ingredients

    1 10 oz. can of chunked chicken meat (white meat)
    7 oz can of chopped green chiles
    .5 C frozen corn
    .5 C Black Beans
    .2C Onion, chopped
    1 tsp garlic
    cumin to taste
    1 C refried beans
    .5 C cheddar cheese
    red pepper flakes ( to taste)



Tips

I've made this several times, but tonight made them with home made tortillas! The calorie count is a bit higher with them, but really unique flavor for that once in a while treat!


Directions

saute onion and garlic and red pepper until onion is translucent. add chicken, juice and all. add chiles (drained but reserve liquid)toss in corn and black beans ( if needed, add a little reserved liquid ). in seperate pan, warm 1 cup of fat free refried beans. . warm 6 tortillas in microwave according to pkg instructions. Take a butter knife and spread the refried beans thinly over the tortilla's. With slotted spoon, fill tortilla's and toll up. place in 8 by 8 square baking dish sprayed with pam, pour 1 cup of enchilada sauce over and top with cheese, bake for 20 minutes at 350. Enjoy!
