Best coleslaw ever. This amazing combination of cabbage with chunky blue cheese dressing. This is good for people who think they don't like blue cheese! Best coleslaw ever. Number of Servings: 16

Ingredients

    1 head cabbage shredded (or two bags of coleslaw mix)
    1 small red pepper
    1 onion chopped
    1 cup whole milk soured with 2 Tbsp. lemon juice
    1 cup mayo
    2 Tbsp. honey mustard (or yellow)
    2 cloves garlic, minced
    1 cup blue cheese, crumbled
    1/4 cup vinegar
    2 Tbsp. orange juice
    1 bag arugula
    1 bag baby spinach
    1 Tbsp. salt
    1 tsp. pepper

Directions

Mix ingredints for salad dressing (soured milk, mayo, mustard, garlic, blue cheese, vinegar, orange juice, salt and pepper) in the bottom of very large bowl. Add cabbage, onion, and red pepper and mix well. Wilt greens in a very large pot with 1 tsp oil, then add hot wilted greens to salad and stir well. Store in the fridge until ready to serve.

Serving Size: makes about 10 cups (20 - 1/2 c.servings)
