IntroductionThis is a very thick 'stew' type consistency soup. It makes 8 2 cup servings. Can add more liquid to 'stew' when heated. This is a very thick 'stew' type consistency soup. It makes 8 2 cup servings. Can add more liquid to 'stew' when heated.
4 cups grated red potatoes
2 grated onions
1 T chopped garlic
4 stalks chopped celery
7 cups chopped mushrooms
6 cups frozen chopped spinach
10 cups fresh spinach
10 cups chopped kale
1 small can chopped green chilies
2 1/2 cups chopped clams (I use the canned)
1 T granulated chicken bouillon
2 cups 1% milk
2 cups water
Salt, pepper, nutmeg & nutmeg to taste
All the spinach can be either all frozen or fresh (chopped).
Add water, bouillon and other seasonings and cook 15 minutes, stirring often..
Add spinach, kale chopped green chilies. Mix well to wilt greens and cook another 15 minutes.
Add chopped clams and 2 cups 1% milk.
Mix well, heat and serve.
Serving Size: makes 8 2-cup servings
