3 Cups Part Skim Ricotta
3 Egg Whites
Basil (shredded/chopped) or other herb to taste
Salt/Pepper
3 T Olive Oil
Tips
Love this with a side salad. If you're not watching your carbs serve this with a toasted baguette or crusty bread. If you make it in a large ramekin, you can serve as an appetizer at a party or save it all for yourself. Toss some berries on it and it's either a great summer meal or even a dessert!
Directions
Preheat oven to 350. Mix together the ricotta and egg whites, then add in the herbs, salt, and pepper. Grease the ramekins or small casserole dish with cooking spray (save some calories), scoop in the cheese mix, and drizzle with oil. Bake for about 1/2 hour at 350.
Serving Size: Slice into 6 pieces or make in 6 ramekins
