IntroductionThis is an easy and hearty soup. This is an easy and hearty soup.
3 cups Dice tomatoes (canned, no salt added)
2 cups Pork & Beans (1 can)
2 cups Red Kidney Beans (drained and rinsed)
2 cups White Kidney Beans (drained and rinsed)
2 cups Black Beans (drained and rinsed)
1/2 cup Green Chilies (canned)
3 cups Low Sodium Chicken Broth
2 cups Frozen Corn
1 cup Onion (diced)
4 cloves of Garlic (minced)
6 Chicken Thighs (skinless, boneless)(can put in frozen)
2 Tbsp Chili Powder
1 Tbsp Paprika
1 tsp Oregano
1 tsp Cumin
1 tsp Black Pepper
1 tsp Salt
I like to add a spoon of greek yogurt or sour cream on top of each serving. (not in nutritional calculation)
Once done, remove the chicken to cutting board and shred with two forks.
Return chicken to slow cooker and stir.
Serve and enjoy!
