Ingredients

    1/2 pound beef shank /fat trimmed
    1 c. chopped onions
    2 clove garlic, minced
    1/8 tsp cumin
    1/4 tsp. freshly ground white pepper
    2 c. beef stock
    1 c. diced carrots
    I whole fresh tomato/quarterd
    1 larger whole potato /quarterd
    1 Tbsp Cilantro Fresh
    2 Tbsp Lime Juice
    dash of sea salt

Tips

You can also add cut corn on the cobb and cabbage.


Directions

In a large pot, simmer beef ( I cut into cubes of an 1 inch) in water with sea salt and garlic over medium heat/uncovered until meat is tender. Add in carrots, potato , white pepper bring to a boil or unitl veggies are tender. Reduce heat to simmer. In a blender add broth , onion , cumin , tomato , fresh cilantro and liquefy , stir into pot , simmer until blended. Serves 2.
