Roasted vegetables

Ingredients

    Carrots, cooked, 2 carrot
    Onions, raw, 1 small
    Garlic, 4 clove
    Green Beans (snap), 1 cup
    Canned Tomatoes, 1 cup
    Eggplant, 1 cup (1" cubes)
    *Zuccini - medium, 1
    Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia)
    Olive Oil, 1 cup
    Salt, 3 tbsp
    Pepper, black, 1 tbsp
    balsamic vinegar, 2 tablespoon

Tips

serve over rice, with pita and hummus, on pizza, pretty much anywhere


Directions

preheat oven to 450
chop all vegetables into uniform cubes
combine all ingredients on baking sheet
bake for 1-2 hours or until tender and caramelized, turning often
