Southwestern Rice and Beans

Ingredients

    1 cup white rice
    1 28oz can diced tomatoes
    1 cup canned black beans, rinsed
    1/2 tsp cumin
    1/2 tsp coriander
    1/2 tsp. garlic powder
    salt and pepper to taste
    Chili pepper flakes to taste

Directions

Put rice, tomatoes, black beans and spices into a medium-sized saucepan. Place over medium-high heat and bring to a boil. Turn heat down and let simmer until liquid is absorbed and rice is tender, about 20 minutes. Fluff with a fork just before serving.
Makes 8 servings, approx. 1/2 cup each
