Ingredients

    8 eggs
    1/2 cup skim milk
    1 tsp salt
    1 cup tomatoes (diced)
    1 cup spinach leaves (shredded)
    1 cup cheddar cheese (shredded)

Tips

Store covered in fridge and microwave to reheat if needed


Directions

1) Heat oven to 350 degrees and spray one 12 cup muffin tin with cooking spray

2) Whisk eggs, milk and salt, and distribute evenly in the 12 muffin tins

3) Add spinach, tomato, and cheese to muffin tins as desired

4) Bake frittatas for 20 minutes
