Fall Carrot Apple Salad

Fall Carrot Apple Salad

Introduction

This is similar to a dry cole slaw but without cabbage This is similar to a dry cole slaw but without cabbage
Number of Servings: 3

Ingredients

    3 Medium Carrots
    1 Large Apple
    10 Red Grapes
    1 Box (1 oz) raisins
    1 tsp Splenda
    1/2 tsp Cinnamon
    Pinch of Ginger
    Pinch of Nutmeg
    Pinch of Salt
    Pinch of Cream of Tartar

Tips

Can be topped with 2 tbsp fat free cream cheese (add: 30 calories, 5mg cholesterol, 210mg sodium, 2g carb, 1g sugar, 4g protein, 10% vit A, 15% calcium).


Directions

1. Slice carrots lengthwise making thin strips, then slice each strip into about 4 shorter strips
2. Slice apple into wedges. Slice wedges into sticks similar in size to carrots.
3. Slice grapes in quarters lengthwise.
4. Mix all ingredients together in a bowl
5. Mix cream of tarter with about 2oz of water (a shot glass works well) and mix into apple mixture to prevent browning.
6. Soak raisins in water
7. Mix together Splenda, cinnamon, ginger, nutmeg, and salt in a small bowl.
8. Mix spices into fruit/carrot mixture.
9. Drain raisins and add to mixture.
10. Let sit for about 10 minutes.

Serving Size: Makes 3 1 cup servings
