2 C. quinoa, cooked and cooled (=0.5 C. dry)
1/2 sm red onion, sliced thin
1 stalk celery, minced
1 C. seedless red grapes, halved
1/2 C. feta cheese, crumbled or diced
2 T. cilantro (optional, or your favorite fresh herb)
1 T EVOO
juice of one lemon (or more, to taste)
salt and pepper to taste
If you don't like cilantro, I would think parsley, mint, basil or chives would be great. This functions well as a clear out the fridge recipe--I've added carrots, red peppers and cherry tomatoes. However, this is my favorite version.
Combine with other ingredients except for salt. Chill for 1 hour to let flavors meld. Taste and add salt, if necessary.
Serving Size: Makes 4 main dish servings or 8 side dish servings
