Quinoa Salad with Grapes and Feta

Introduction

A very refreshing meal or side dish. Perfect for brown bag lunches and picnics. Delicious and healthy. Lasts 2-3 days in fridge. A very refreshing meal or side dish. Perfect for brown bag lunches and picnics. Delicious and healthy. Lasts 2-3 days in fridge.
Number of Servings: 4

Ingredients

    2 C. quinoa, cooked and cooled (=0.5 C. dry)
    1/2 sm red onion, sliced thin
    1 stalk celery, minced
    1 C. seedless red grapes, halved
    1/2 C. feta cheese, crumbled or diced
    2 T. cilantro (optional, or your favorite fresh herb)
    1 T EVOO
    juice of one lemon (or more, to taste)
    salt and pepper to taste

Tips

If you don't like cilantro, I would think parsley, mint, basil or chives would be great. This functions well as a clear out the fridge recipe--I've added carrots, red peppers and cherry tomatoes. However, this is my favorite version.


Directions

Rinse quinoa (important) and cook according to package directions (they all differ). Cool.

Combine with other ingredients except for salt. Chill for 1 hour to let flavors meld. Taste and add salt, if necessary.

Serving Size: Makes 4 main dish servings or 8 side dish servings
