Ingredients

2 5 oz cans chicken breast, drained
3 Tbs low fat mayonnaise
4 Tbs fat free sour cream
1/8 cup of cucumber, orange bell pepper and celery. (I like to use mostly the celery leaves with some of the stalk)
shredded lettuce.
Optional: Red Onion, shallots, craisins, pickles relish or chopped hard boiled egg.
Tips
Very versatile recipe that you can style to your own taste.
Directions
Mix all ingredients together and spread 1/4 on whole grain bread toped with lettuce.
Or place 1/4 on a bed of salad greens.
