Lentil, Spinach and Curry Soup

Introduction

Number of Servings: 8

Ingredients

    Lifesmart lentils 540ml can
    2 medium potatoes cubed
    2 raw carrots sliced
    2 stalks celery sliced
    2.5 cups fresh spinach
    2tbsp olive oil
    1/2 onion
    1tbsp minced garlic
    2tsp curry powder
    1tsp red pepper flakes
    1tsp ginger
    60ml red wine
    1 6oz can tomato paste

Tips

Add more spices if desired. May omit the red wine.


Directions

Saute olive oil and onions in pan, add garlic for two to three minutes. Add 7 cups of water, carrots, celery, lentils, spices, potato, red wine and tomato paste. Cook for 30min. Add spinach and cook for 30 more min.
