Apple Coffe Cake

    Apples, fresh, 1 large (3-1/4" dia) (approx 2 per lb
    Big Y All Purpose Bleached Enriched Flour, 1 cup
    Stop & Shop Whole Wheat Flour, 1 cup
    Hy Top Baking Soda, 1 tsp
    Big Y Iodized Salt, 0.25 tsp
    Domino Light Brown Sugar, 2/3 cup
    Granulated Sugar, 3 tbsp
    Cinnamon, ground, 0.5 tsp
    Land O Lakes Butter with Olive Oil & Sea Salt, 2 tbsp
    Stop & Shop Canola Oil, 2 tbsp
    Egg, fresh, 2 large
    Vanilla Extract, 1 tsp
    Stop & Shop Plain Nonfat Yogurt, 1 cup


1. Place the apple in a microwave safe bowl and microwave on high until softened, about 90 sec. Set aside.
2. Preheat oven to 350F. Spray 8" sq. pan (or 3 mini loaf pans) with cooking spray.
3. In a large bowl, whisk together the flours, baking soda, and salt.
4. In a small bowl, stir together the granulated sugar and cinnamon. Mix in apples.
5. In a large bowl, beat the brown sugar, butter, and oil until well combined. Beat in the eggs until well combined. Beat in the vanilla and yogurt. Add the flour mixture in two batches, stirring until just combined after each addition.
6. Pour half of batter into the prepared pan and spread evenly. Sprinkle half the apple and cinnamon mixture over the batter and press it gently into the batter. Repeat with remaining batter and apples creating two layers.
7. Bake until tooth pick comes out clean (about 35 min.) Cool, cut and enjoy.
