Shrimp & Quinoa Stir Fry

Ingredients

    1 cup quinoa
    2 cups unsalted chicken stock

    1 tbs olive oil
    1 lb shrimp, peeled & deveined
    1/2 vidalia onion, chopped
    1 medium green pepper, chopped
    1 cup mushrooms, sliced
    3 cloves minced garlic
    4 oz grape tomatoes, halved
    2 tbs fresh dill
    2 tbs fresh parsley
    1 tsp crushed red pepper

Tips


Directions

Bring quinoa and chicken stock to boil, then reduce heat to simmer 10-15 minutes.

Heat olive oil in large skillet. Add remaining ingredients and stir fry until shrimp is done.

Serve shrimp over quinoa.
